Lost and Found

Tasty Tuesdays



A friend of mine just had a baby.  I wanted to make her family something super yummy to eat when they came home from the hospital.  The first thing I thought of was chicken salad, wrapped in puff pastry.  It is the ultimate in comfort food, and it's pretty easy to make.  I always make two, one to eat, and one to freeze for later.

1 package of puff pastry sheets (I prefer Pepperidge Farms, in the freezer section)
2 boneless, skinless, chicken breasts
1 red pepper (diced)
1/2 cup of green onions(minced)
1 cup of shredded sharp cheddar cheese
1 cup of mayonnaise
1 egg
Olive Oil
salt and pepper to taste

Defrost puff pastry and pre-heat oven according to package directions

Cut the chicken breasts into bite-sized pieces and brown in a skillet using a little bit of olive oil, salt and pepper. Once the chicken is browned, set aside to cool.

In a bowl add cheese, green onions, red peppers, mayonnaise, salt and pepper, and chicken. Mix all together.

Spray a cookie sheet with Pam non-stick spray and lay one pastry sheet on the cookie sheet. Crack egg and beat it until well mixed. Brush egg on pastry. The pastry sheet should have three sections, cut the two side sections in one inch strips. Fill the middle of the pastry with salad mixture. Fold sides of of pastry over the top of the salad, alternating sides. Tuck in ends and brush egg mixture over the top. Repeat process for second pastry sheet. Bake according to pastry package directions, or until golden brown, about 15-18 minutes.

In two short weeks my kids head back to school.  I love this time of year.  I love all the anticipation.  I love all the new school supplies and new clothes.  The night before school starts we have a special dinner and talk about the coming school year.  We set some goals, and plan some fun rewards for all the hard work to come.  We also get out my kids' school scrapbooks and look back on past years with fondness.  It's  great way to get my kids excited for another great year of learning.  This month you have the chance to win some great supplies you could use to create and album, or perhaps to use for school projects, or as rewards.

Here are the rules:

1.  This giveaway is only open to residents of the United States and Canada.  We looked into shipping for other countries and it is just too expensive.  This giveaway is also void where prohibited.

2.  Enter by going to our website All Scrapbook Steals, to check out all our great deals.  Then, leave a comment at the end of this post telling us what your favorite back-to-school supplies are.  Please be aware that you won't see your comments posted right away, as I have to moderate them, and approve them before they are published.

3.  Receive a second entry if you post about our giveaway on your blog or website.  Please leave the link to your post in the comments section so we can verify your second entry.  You can also post on Facebook or Twitter about the giveaway to earn a second entry.

4.  Entries will be accepted until Midnight PST on August 10th.

5.  Winner will be randomly chosen from all eligible entries received by midnight August 10th by random.org.

6.  Winner will be announced on August 11th here on the blog.
