What you will need:
2 Tbls corn starch
3/4 C. sugar
1/2 C. peach puree (fresh or canned)
1/2 C. water
2 Tbls lemon juice
4 C. peaches, sliced (fresh or canned)
4 oz. cream cheese
1/4 C. powder sugar
1 pie crust (this can be fresh, preformed or the kind
that's rolled out already that you form, anything you want)
Start out with the corn starch and sugar in a small pot and blend in the peach puree, water, and lemon juice. Bring to a boil and cook until it becomes a darker, thick, jelly like consistency, stirring constantly. Set aside to cool.
Beat together the powder sugar and cream cheese until well blended. Spread the cream cheese mixture onto the bottom of a cooled pie crust. Stir together the cooled puree mixture and peaches and poor into the pie crust. Keep refrigerated until ready to serve.
So much has been going on in my life since I blogged and I feel so bad for not updating it as often as I should have been. There were so many fun Halloween and Birthday celebrations for my sweet boy who turned ONE! He is so big and is such a delight in our lives!
