Tasty Tuesday 3 Ingredient Pumpkin Cookies

Well so far my little vacation to Park City has been wonderful!  We have done a lot of fun things and have a few more days of fun left to go.  The weather here has been amazing, overcast and cooling down and fun thunderstorms.  I know a lot of people are not looking forward to Fall being here but I can't wait because that means delicious Fall treats!  One of my favorite things about Fall is pumpkin everything; pumpkin pie, pumpkin shakes, pumpkin cheesecake and of course pumpkin chocolate chip cookies!




What you will need:
One box spice cake mix
Half a bag of mini chocolate chips
Small can of pumpkin










Heat oven to 375 degrees.  Poor all of the ingredients into a mixer and blend until all ingredients are well mixed.  Spray cookie sheet with Pam and drop dough onto cookie sheet, about 2 Tbls each.  Then bake for 18 minutes and enjoy!  So simple and easy and pretty healthy too :)  Hope you enjoy it!

My Minds Eye Card Ideas

Hello again!  Whew, we did it, we all made it to Friday and I could not be happier.  My whole family is going to Park City, UT this weekend so, as life goes before a trip, this week could not have gone any slower.  We are so excited to finally get a little getaway and to have a little family bonding time.  Also I can't believe my little man is 10 months old already and will be a year in two short months!  Time sure flies when you're having fun :).

So anyway, exciting news, My Minds Eye did a new Blog post just today with some great new card ideas using Cut and Paste.  This is our best seller right now and is flying off the shelf and with these card ideas, I can see why!  Hope you enjoy the crafting ideas!

Pastiche Party: On Making Scrapbooks

Sometimes, pictures tell a story better than a wall of text can, and plain old diaries just can't capture a memory as well as a photograph can. For those who want something a little more visual to cover milestones in their lives, perhaps a scrapbook would suit them. Scrapbooks are essentially the bridge between personal journals and photo binders, as they're meant to tell life stories, but with more graphical elements involved.

There are no design restrictions in making a scrapbook; that's why no two are ever the same. People are free to decorate and embellish their scrapbooks as they see fit, and it's not unusual to find a book littered with a wealth of stickers, cutouts, drawn pictures, photographs, and so on. Due to the nearly infinite ways to make a scrapbook, there are many scrapbooking products out on the market meant to provide enthusiasts with as many materials to use.

With so many design elements available for scrapbooks, it can be mind boggling for some. Additionally, not all scrapbook materials are readily available, and this can be a loss for those who want specific designs and themes for their books. It's a good thing that a lot of these products can be found and purchased online by the most diehard scrapbookers.

Tasty Tuesday Award Winning Chili

I love Fall.  It is just a matter of fact, I love it.  I wish I could live somewhere where it was fall all year round.  The scarves, boots, sweaters, Football, and food, what's not to love about it?  Here in Utah however, Fall usually means snow in about a month, but beggars can't be choosers ;).  So to get ready for my favorite time of year I thought I would entice you with the best chili you will ever make winner of blue ribbon Arizona State Fair, 1989!


Rocky Mountain Elk Firehouse Chili       

1 1/2 lbs. ground elk meat 9 (or beef)
1 large yellow onion, diced
2 cloves garlic, chopped
2 cans tomato sauce (10 1/2 oz. each)
2 cans Italian-style stewed tomatoes (15 1/2 oz. each)
1 can dark red kidney beans, drained (15 1/2 oz. each)
1 can black beans, drained (15 1/2 oz. each)
1 small can diced green chilies
1 fresh jalapeno pepper, diced
1 fresh yellow hot pepper, diced
1/2 cup red bell pepper, diced
5 tsp. red chili powder
1 1/2  tsp. cumin powder
1 tsp. salt
1 tsp. dried oregano
1 tsp. black pepper
1/2 cup brown sugar

Brown meat, onion and garlic in skillet in small amount of oil. Drain. Add to other ingredients in a pot, cover and simmer on low for an hour or more.  Serves 4-6

In the picture you will see that we served it over a Corn Bread Waffle.  Just buy a package of corn bread mix, which ever you like or make your own, and poor into a waffle iron and cook for just a few minutes.  Then top with anything you like; cheese, sour cream, etc.  I think it is FANTASTIC just by its self though.  I swear once you make this you will never want any other kind!

Crate Paper Project

I hope you all had a wonderful weekend and are ready for some more crafting ideas!  Summer is sadly quickly coming to an end and children will be going back to school, which means more time to craft of course ;).  I'm sure you all had many adventures and took a good trip or two and are looking for a way to make a keepsake for all those wonderful memories you made.  Well this project from Crate Paper's Blog is just the thing for those memories! 

For this adorable tag mini album the designer used Crate Paper The Pier.  The base of this project uses The Pier Tag Cut Outs and then it is just a matter of layering stickers and chipboard from this hot summer line.  Be sure to check out Crate Paper's Blog for more pictures of this project and more fun crafting ideas. Washie Tape Project

 I hope by now you have all made the Death By Decadence bars and ate too many to move, so you just have to sit there and craft!  Now I have you right where I want you, in creating mode ;)

We always have people asking us what Washi Tape is, how to use it, what to use it for, and why is it such a big hit.  The answer is basically it is more pliable patterned scotch tape.  It is super easy to use on any project and especially helpful for those tiny embellishments you don't want to cut a tiny piece of paper for.  In the case of this project it is helpful so you don't have to cut skinny strips of paper to wrap around these straws. And the skinny strips of paper would probably just frustrate us and make us feel resentful towards the dessert we just ate because we sure aren't feeling skinny ourselves anymore ;).
