Tasty "Tuesday" Peach Pie

It is time for a long over due Tasty Tuesday.  I do realize it is not Tuesday and that most of you probably wont read this until Thursday, but I need to share with you right!?  So this pie always gets rave reviews and is such a nice twist on the traditional Thanksgiving pies.  I recently made it for a church activity and everyone loved it and wanted the recipe.

What you will need:
2 Tbls corn starch
3/4 C. sugar
1/2 C. peach puree (fresh or canned)
1/2 C. water
2 Tbls lemon juice
4 C. peaches, sliced (fresh or canned)
4 oz. cream cheese
1/4 C. powder sugar
1 pie crust (this can be fresh, preformed or the kind
that's rolled out already that you form, anything you want)



Start out with the corn starch and sugar in a small pot and blend in the peach puree, water, and lemon juice.  Bring to a boil and cook until it becomes a darker, thick, jelly like consistency, stirring constantly.  Set aside to cool.











Beat together the powder sugar and cream cheese until well blended.  Spread the cream cheese mixture onto the bottom of a cooled pie crust.  Stir together the cooled puree mixture and peaches and poor into the pie crust.  Keep refrigerated until ready to serve.
So Delicious!
