Giving Thanks Pattern Papers by Teresa Collins
Glue: Glossy Accents by Ranger Industries
Directions:
Cut out any size of circle (Number needed depends on size of circle) (Teresa used 14)
Fold all of the circles in half
Glue folded edges of circles together to form an accordian

September Cards
I don't know about the rest of you, but we have started getting out our Halloween decorations. My kids get more excited every year. They've already chosen their costumes, and started a countdown until the magical night of candy. I am also a huge fan of Halloween, so of course I had to make Halloween cards this month.

Tasty Tuesday
Fall is just around the corner. Before you know it we'll be wearing jackets and boots instead of shorts and sandals. One of my favorite dishes for Fall is meatloaf. It's comfort food at its most basic. If you're not a fan of meatloaf, then you've never tried my take on Williams-Sonoma's Italian Meatloaf. Forget onions and ketchup, this meatloaf has pesto and sun dried tomatoes. I always double the recipe and make two loafs, one to cook and eat, and one to freeze for later. Once you have your ingredients you can whip this up and pop it in the oven in about 5 minutes.
Italian Meatloaf (adapted from Williams-Sonoma's Simple Suppers Cookbook)
1 lb. Lean ground beef
1/2 lb. Ground pork
4 oz. Pesto
1 cup Progresso Italian Style bread crumbs
4 oz.Oil-packed sun-dried tomatoes-chopped
1 Egg
1/2 tsp. Salt
Preheat the oven to 350 degrees
In a large bowl, combine the beef, pork, pesto, bread crumbs, sun-dried tomatoes, egg, and salt. Mix gently, but thoroughly with your hands. Form the mixture into a rough 9-by-5-inch loaf in an 11-by-7-inch shallow baking dish.
Bake the meatloaf for approximately 45 minutes, or until the internal temperature is 160 degrees. Let the loaf stand in the pan for 5-10 minutes before slicing.
I like to serve this with either a Caesar or Caprese salad.

Teresa Collins Wedding Album
First of all let me introduce myself, I am Sinda, Carissa's younger sister and I have recently joined in the fun of our little family owned business so I will also be posting ideas on our blog periodically! This is my first real adventure in scrapbooking on my own and I have to say I am quite proud with how it turned out! My husband Dave also works for the company, he is the one who sends those of you on our Email list most of the daily Emails. So this is mine and my husbands wedding album.
This velvet album is from our Mr. & Mrs. Line from Teresa Collins. Most of the paper that I used is from the same line and is all double sided and so cute. All of the sayings that I used are on one side of the double sided card stock and I loved using the chipboard elements. Other things that I used were our Lush line from My Minds Eye. The Paper in the last image is from Lush as well as the bling on the front and back cover and the ribbon around the back cover. The other product I used a lot of is Chips from Pebbles. All of the cute flowers, hearts and swirls are from the Chips. The Flower that I tied to the side of the album is our velvet Florals from Heidi Swapp.

Tasty Tuesdays
A friend of mine just had a baby. I wanted to make her family something super yummy to eat when they came home from the hospital. The first thing I thought of was chicken salad, wrapped in puff pastry. It is the ultimate in comfort food, and it's pretty easy to make. I always make two, one to eat, and one to freeze for later.
1 package of puff pastry sheets (I prefer Pepperidge Farms, in the freezer section)
2 boneless, skinless, chicken breasts
1 red pepper (diced)
1/2 cup of green onions(minced)
1 cup of shredded sharp cheddar cheese
1 cup of mayonnaise
1 egg
Olive Oil
salt and pepper to taste
Defrost puff pastry and pre-heat oven according to package directions
Cut the chicken breasts into bite-sized pieces and brown in a skillet using a little bit of olive oil, salt and pepper. Once the chicken is browned, set aside to cool.
In a bowl add cheese, green onions, red peppers, mayonnaise, salt and pepper, and chicken. Mix all together.
Spray a cookie sheet with Pam non-stick spray and lay one pastry sheet on the cookie sheet. Crack egg and beat it until well mixed. Brush egg on pastry. The pastry sheet should have three sections, cut the two side sections in one inch strips. Fill the middle of the pastry with salad mixture. Fold sides of of pastry over the top of the salad, alternating sides. Tuck in ends and brush egg mixture over the top. Repeat process for second pastry sheet. Bake according to pastry package directions, or until golden brown, about 15-18 minutes.

Map of America
I don't know about you, but I am starting to get excited for the kids to go back to school. My children head back in about three weeks. As much as I love the lazy days of summer, I've started to miss having a structured routine.
I try to come up with lots of fun, educational, projects we can work on during the summer so my kids don't forget everything they learned in school while they're on vacation. When I saw this map on Amber Packer's blog I thought it would be a perfect end of summer project. She used My Mind's Eye's So Sophie line of papers and I love the color combination. This week's money saving tip is to buy ahead. I am always thinking about my family's future needs, so when I find something on sale, I can buy it and save myself a lot of money down the line.
For example, I have two kids heading to school this Fall. They will both need backpacks and lunch bags. When I was in Utah visiting family earlier this summer I stopped into Down East Outfitters (my favorite bargain hunting ground). They had monogrammed Pottery Barn Kids' backpacks, and lunch bags, on clearance for an additional 50% off their already low prices. I grabbed two sets of matching backpacks, and lunch bags for each kid. The backpacks were $5.00, and the lunch pails $2.50. I took them home, sat down with a seam ripper, and removed the monograms. Now I have two years worth of back to school supplies for two kids that cost me a grand total of $30. Even if I had purchased backpacks and lunch bags on sale at Target I would have paid at least $10 for each backpack, and $5.00 for a lunch bag. Plus, Pottery Barn Kids' bags are much higher quality and won't be coming apart at the seams by the end of the school year. Buying ahead means you save money, and get better quality.
